The environmental conditions are perfect to create a whisky which exhumes expressive maple, vanilla oak and spicy sea air. The distillery is owned and operated by Gareth and Angela Andrews who have been distilling quietly until their first release in 2017 caught the attention of many whisky drinkers world wide. Since this first release the distillery has been graced with many local and international awards for their whisky including Gold medals in Australia and Gold in the United States. The Signal To Noise s a vatting of six 100 litre ex Apera (sherry) barrels with the title paying tribute to the Peter Gabriel song. Winner of a Gold Medal in the category for Craft Spirit at the American Distilling Institute Awards 2020. Bottled at 51% ABV and the purchase also comes with a surprise wee small gift in the box. Our Tasting Notes Nose: Hazelnut meringue cookies, vanilla paddle pops, baking spices and some gentle toasted oak. Palate: Creamy vanilla toffee, hazelnut dacquoise, golden syrup and some gentle baking spices. Finish: Sherry dry fruits, allspice and chocolate shavings.. For adults of legal drinking age.
