Kinglake Distillery is situated about 56kms north of the city of Melbourne in Victoria, Australia. It boasts a wonderful climate for producing single malt. The whisky here is created from scratch by owners Sam Lowe & Chantal Daniels . Grinding their own malt, taking local water from a mountain stream rising on the distillery property. It’s natural, pure and totally unfiltered. 80% of the barley is farmed and malted in New South Wales and each grower is known to the team at the distillery personally. Bourbon, port and sherry barrels are all individually re-coopered to their requirements. Using their 2500 litre copper pot-still which was handmade for the distillery by Tasmania’s premier still-maker Knapp Lewer. It was engineered to produce a heavy, flavourful spirit. We’ll be joined for the by Sam Lowe & Chantal Daniels, the owners, marketers, designers and whisky makers at Kinglake Distillery. A family team that have a passion for whisky and for their local area. In this whisky tasting we will not be tasting a range of whisky but deep diving into how the whisky is created. You’ll be joined by the creators of the malted barley and receive samples of the malted barley used to create the whisky. As the malting house discuss the different barley variates and how they are created we’ll be smelling, touching and tasting the malted barley types, Atlas, Vienna, Peated, Voyager and Chocolate. We’ll then taste the finished product, the O’Grady’s Stand Single Malt Whisky. Once we’ve enjoyed some of the single malt we’ll then taste and discuss the new make spirit and the components that Sam and Chantal are looking to create when distilling. Next we’ll be understanding the ‘work in progress’. Tasting the spirit after it’s been in the barrel for around one year and discuss the changes that have taken place whilst maturing it. We’ll then enjoy the finished product before water is added to lower the alcohol volume. A cask strength single malt at 61% ABV from a single barrel. To finish we will again explore the Kinglake O’Grady’s Stand Single Malt Whisky and hopefully recognise and understand the flavour components of the whisky and appreciate the product after a journey of creation.
