The fermented wash is then double-distilled in copper pot stills to produce a clean, smooth spirit. After distillation, the rum is aged in oak barrels for a minimum of two years, which gives it a rich, complex flavor. The barrels used for aging are carefully selected to impart a unique flavor profile to the rum.
