The maturation process consists of spirit being given time to mature in European oak ex-Oloroso Sherry barrels and American oak ex-bourbon barrels. Matured for no less than 12 years this single pot still whiskey is truly superb and a leader in its field. So what exactly is single pot still whiskey? Essentially, it’s whiskey that is made from malted and un-malted barley and no other grain. It is unblended (thus the “single pot” bit.) And it must be made in Ireland to be considered as such. Our Tasting Notes Nose: It’s nutty , rich and oily. dried orange peel, lemon peel and apple peel. Hints of ginger, freshly cut melon and freshly cut grass. Taste: Toasted almonds and stewed citrus fruits, wee hints of marzipan, dried raisins and figs. Hints of Sherry sweetness. Very luscious.
