The maturation process consists of spirit being given time to mature in first fill European oak ex-Oloroso Sherry barrels and first fill American oak ex-bourbon barrels. Matured for no less than 21 years this single pot still whiskey is truly superb and a leader in its field. So what exactly is single pot still whiskey? Essentially, it’s whiskey that is made from malted and un-malted barley and no other grain. It is unblended (thus the “single pot” bit.) And it must be made in Ireland to be considered as such. Bottled at 46% abv. Our Tasting Notes Nose: Tropical fruits and deep fried Snickers bars. Figs, prunes and quinces excites the palate with caramelised apples and stewed pears.
